Ingredients:
2 cups rolled oats
1 cup dried apricots, chopped
1/2 cup almond butter (or any nut/seed butter of your choice)
1/3 cup honey or maple syrup (vegan version)
1/4 cup coconut oil, melted
1 teaspoon vanilla extract
1/2 teaspoon cinnamon (optional, for a warm flavor)
A pinch of salt
Instructions:
Preparation: Start by preheating your oven to 350°F (175°C). Grease or line an 8x8-inch (20x20 cm) baking pan with parchment paper, leaving some overhang for easy removal.
Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped dried apricots, and cinnamon (if using). Mix them well to distribute the apricot pieces evenly throughout the oats.
Prepare Wet Ingredients: In a separate microwave-safe bowl, melt the coconut oil. Once melted, add the almond butter, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir the ingredients until it is smooth and completely blended.
