Quick and Easy Biryani Recipe

Ingredients:
• 1 cup Basmati rice
• 1 lb (450g) chicken, cut into pieces
• 1/2 cup plain yogurt
• 1 large onion, thinly sliced
• 2 tomatoes, chopped
• 2 tablespoons ginger-garlic paste
• 2 green chilies, slit
• 1/4 cup chopped mint leaves
• 1/4 cup chopped coriander leaves
• 1/2 teaspoon turmeric powder
• 1 teaspoon red chili powder
• 1 teaspoon Biryani masala
• 1/4 teaspoon saffron strands
• 2 tablespoons warm milk
• 2 tablespoons ghee or oil
• 4 cups water
• Salt to taste
• Whole spices: 2 bay leaves, 4 cloves, 4 green cardamoms, 1-inch cinnamon stick
Method:
1. Rinse the Basmati rice under water till the water becomes clear. Soak the rice in water for 15-20 minutes.
2. In a bowl, mix chicken pieces with yogurt, ginger-garlic paste, red chili powder, Biryani masala, and a pinch of salt. Let it marinate for 15 minutes.
3. In a small cup, soak saffron strands in warm milk and set it aside.
4. In a large pot or pressure cooker, heat ghee/oil over medium heat. Add the whole spices and sauté for a minute until fragrant.
5. Now add sliced onions and cook until they turn into golden-brown color and become crispy.
6. Add the marinated chicken to the pot and cook until it's no longer pink on the outside.
7. Stir in chopped tomatoes and cook until they become soft and mushy.
8. Add chopped mint and coriander leaves, green chilies, turmeric powder, and salt. Mix well.
9. Add the drained rice to the pot after it has soaked. Gently mix everything together.
10. Pour 4 cups of water into the pot. Bring it to a boil.
11. Once it starts boiling, reduce the heat to low, cover the pot with a lid, and let it cook for about 15-20 minutes until the rice and chicken are fully cooked.
12. Just before serving, drizzle the saffron milk over the Biryani for a lovely aroma and color.
